Pretty much depends on class. Rich people would be able to have imported spices (although salt also was pretty expensive). Genoa was a port city, so it would have easier access to spices. But all classes would flavor their food, often with herbs or fruits as less expensive options. The Church recommended many restrictions though, with enjoyable food considered a sinful indulgence, so a particularly devout Nicky might be unfamiliar with spices.
